Limestone Coast SA 2002 was one of the best vintages to date. Low yields and a near perfect growing season meant that fruit was picked at optimum flavour ripeness. As a result this Cabernet is loaded with fruit rich in colour and intensity. This Cabernet is a fine example. The nose boasts ripe berry fruit flavours with hints of cassis and cedar. The intense fruit flavours follow through onto the palate with blackcurrant and chocolate undertones. The wine was fermented in a combination of stainless steels tanks and open concrete vats where it was hand plunged three times per day to achieve gentle tannin extraction. The wine was left on skins after fermentation for extended maceration to add complexity and to further soften tannins. Aged exclusively in French oak for 18 months prior to bottling this wine is ready to drink now but will reward with careful cellaring.
